Beetroot Halwa

Ingredients:
Ghee - 3 Tbspns
Beetroots: 2
Sugar: 7/8 Tbspns
Elaichi / Cardmom - 3/4
Milk - 1 Cup


Making Steps :
Grate the beetroots. In a frying pan add ghee and grated beetroot. Drop in 2-3 Cardamoms.Keep it on low flame and close the lid. Add sugar, mix and leave it closed.While this is getting teder, add a cup of milk and stir. Reduce heat and simmer for 10 minutes until it gets cooked.This can now be served as a Dessert!

Boiled Egg Fry

Ingredients:
Onions -1
Green Chillis - 5/6
Boiled Eggs: 3

Seasoning:
Mustard Seeds
Jeera Seeds
Curry Leaves
Turmeric Powder
Pepper Powder(Optional)


Making Steps :
1. Add oil in a frying pan and put Tadak/Popu with ingredients under Seasoning Section along with a pinch of turmeric powder.
2. Add thinly sliced onion pieces and lengthwise cut mirchi and fry until onions become transparent
3. Cut boiled eggs in to two halves and place in the same frying pan.


4. Add salt and close the lid for a while, open the lid and turn each egg piece so that the other side too gets fried.
5. Add little pepper powder (optional)

Goes With:
Roti
As a Side dish with Rice.

Brinjal/Egg Plant Curry

Ingredients(For Grinding):

Roasted Peanuts - 2 Tbspns
Besan Powder/Sanaga pindi – 1 Tb spn
Salt
Turmeric powder - a pinch
Chilli powder- 2 Tb Spns
Lemon Juice- 4  Tb Spns
White Sesame seeds - 1 Spn
Ginger&garlic paste - 1 Tb Spn
Garam masala powder - a pinch
Dhaniya powder- 1 Tb spn
Raw coconut -  4 spoons
Sugar - 1 small spn
Oil - 1 Spn

Other Ingredients:
Onion
Tomato
Brinjals/Egg Plants - 8/10

Making Steps :
1. Grind the ingredients under Ingredients(For Grinding) with very little water.
2. Slit brinjal in to 4 and stuff ground mixture. Keep aside the left over ground mixture.
2. Heat a frying pan with oil and do seasoning(Popu) with mustard&cumin seeds, curry leaves.
3. Add onions, tomatoes  and close lid for a while.
4. To this, add the left over ground mixture along with some water.
5. Close the lid for 5minutes.
6. Meanwhile, microwave the stuffed brinjals for 4 minutes, so that they become tender
7. Open the lid, place these brinjals in the pan and close the lid for 10minutes.
8. Open the lid and flip brinjals to the other side.
9. Add salt(optional)






Goes with:
Rice
Roti

Groundnut tomato Chutney

Ingredients:
Groundnuts/Peanuts- 1 cup
Tomatoes- 1 (Big)
Green chilli
Tamarind
Garlic - 2
Red Chillis - 2
Cumin Seeds
Coriander leaves

Making Steps:
1. Heat oil and put cumin seeds, green and red chillis, garlic , fry for 10minutes and Add tomatoes,tamarind juice.
2. Fry ground nuts in a separate pan.
3. Grind tomato mixture and groundnuts along with salt, water and coriander.

Dosa
Idli

Aloo Masala

Ingredients:
Potatoes- 4(Medium Sized)
Tomatoes-1


For Masala:
Garlic cloves - 2
Coriander
Dhaniya powder-1 Tb Spn
Chilli Powder
Cinnamon Stick -1
Cloves - 2
Turmeric Powder- a pinch





Making Steps:
1. Grind all the ingredients mentioned under "For Masala" section along with water.
1. Heat Oil in a pan, do seasoning(Popu)- Curry Leaves, mustard seeds, cumin seeds, red chillis.
2. Put cut tomatoes and close the pan with a lid for 2-3 minutes.Now Put potato cubes and mix.
3. Close the lid.
4. Open the lid and pour the ground masala and put salt.Mix and close the lid.
5. Leave it for 10 minutes.Keep checking if potato is boiled and close/take out the lid accordingly.

Watermelon Juice

Ingredients:
Water Melon de-seeded(1/2 of a Medium Sized fruit)
Sugar(Optional)
Ice Cubes(Optional)
Lemon Juice - 1 to 2Tb Spns

Making Steps:
1. Cut watermelon into cubes.Put 5-6  cubes aside.
2. Grind these cubes, sugar, lemon juice.
3. Pour this mix in to a bowl through a filter.
4. Wait until the juice slips into bowl, press the left out pulp with a spoon.
5. Pour this juice into glasses.
6. Cut those 5-6 left out cubes into small pieces and put in this juice glass.
7. Add ice if you want.

Palakura Pappu

Ingredients:
Kandi Pappu - 1 Cup
Chopped Spinach - 2 Cups
Green Chillis - 4
Onion - 1
Tomato - 1

Popu ingredients:
Red Chillis
Garlic
Mustard Seeds
Curry Leaves
Zeera


Making steps:
1. Put Dal, spinach leaves, tomato Pieces, onion pieces, Green chillis(cut length wise) and a pinch of turmeric powder in a pressure cooker along with 11/2 or 2 cups of water.Leave it on the stove for up to 3 whistles.
2. Let the cooker cool down, remove the whistle and smash the dal
3. In a pan heat oil/ghee.Put crushed garlic, red chillis, mustard seeds, curry leaves, zeera and fry for 1 min.
4. Add this to the pressure cooked Dal along with salt. Garnish with Coriander
